A centuries-old dance: the art of harvesting

From early October to the end of December, with nets spread under the flourishing olive trees, we are ready to begin the process that gives life to our quality oil: the olive harvest.

Our harvesting method involves using mechanical harvesters, large arms that shake the branches, causing the olives to fall gently into the nets in a traditional dance.

The fruits are safe: we are ready for the next step.

The olive ceremony: ready for milling

Collected in special bins and left to rest for no more than 24 hours in a cool and ventilated environment, we then thoroughly clean the olives to avoid hygiene risks during production.

A fundamental process that allows us to have olives washed with running water using a specific machine and then freed of any leaves, twigs, and soil residues thanks to a defoliator.

Milling and crushing: our Mill 4.0

The olives turn into olive oil in our Mill 4.0.

Using advanced technological machinery, we obtain the olive paste, a mixture consisting of two parts: a solid part made of pits, skins, and pulp, which will be sustainably recycled, and a liquid part made of water and oil.

Malaxing: cutting-edge technology

The malaxers are ready to complete the transformation of our oil.

This process involves separating water from oil through continuous mixing of the olive paste in a steel tank with helical blades. An essential operation that will give life to our quality oil.

Extraction: the birth of green gold – our quality oil

We have reached the end: as the final process begins, the air fills with warm scents of freshly cut grass and fresh olives.

During the extraction phase, we obtain our oil, which, separated from the rest of the mixture, reaches a collection system ready to be bottled and tasted.

Separation and storage: our facility

Once the final separation phase is complete, which involves completely removing the last water residues in the oil, we proceed to storage, a crucial step to ensure that the solid residues naturally settle.

If the product is not to be marketed immediately, it is stored in steel tanks in an atmosphere containing nitrogen. Otherwise, if it is to be sold immediately, it is filtered before the final packaging.
